The Lomo 100% Ibérico de Bellota Monte Dorado is the pure expression of Iberian in its most noble and lean version. Coming from 100% Iberian breed pigs raised in freedom in the Andalusian pastures and fed exclusively with acorns during the montanera, this product represents the fusion between genetic excellence, natural feeding, and artisanal curing.

Its appearance is imposing: a whole piece, firm and slightly marbled, which when cut reveals intense red tones, with purple highlights and fine infiltrations of fat. This fat, with a silky texture and high oleic acid content, melts smoothly in the mouth, enhancing the flavor without saturating it.

The aroma is deep, intoxicating, and balanced, with notes of La Vera paprika, natural spices, and a slightly sweet background that comes from slow curing in natural drying sheds. On the palate, the lomo offers a firm but juicy texture, with an enveloping, long, and elegant flavor that lingers harmoniously without being aggressive.

It is a unique piece, without artifice, made only with Iberian lomo, sea salt, paprika, oregano, and natural garlic, without additives, without preservatives, and with all due respect to tradition.

Nothing is rushed at Monte Dorado. The hams are cured in natural drying sheds for between 18 and 48 months, depending on their category, morphology, and character. The temperature, humidity, and silence work in harmony with the experience of our master ham makers. There is no rush, because haste is not part of authenticity.

During those months, the ham slowly transforms. The fat melts, the meat settles, the aromas are refined. It is an intimate, ancestral process, where time is the true secret ingredient.
