From day one, at Monte Dorado we knew that we did not want to make ham like the others. We wanted to return to the origin. To noble breeding, to absolute respect for the animal, to long curing processes, to delicate cutting, to the flavor that excites.

We work with Iberian breed pigs—many of them 100% pure—raised in full or semi-freedom, in a natural environment that promotes well-being, health and the development of exceptional meat. Fed with acorns, natural pastures or selected feeds, our animals are the first link in a chain that takes care of every detail.

At Monte Dorado, ham is not produced: it is raised, cared for and waited for. In our natural cellars, the pieces rest for up to 48 months, absorbing the soul of the south: its climate, its dry air, its silence.

Our master ham makers do not work with clocks, but with experience. They do not seek volume, but perfection. Each ham and each shoulder ham is different, and requires its own rhythm, its own attention. And only when it reaches the optimum point, is it released to the world.
