The Iberian shoulder ham, often overshadowed by its older brother, the ham, has its own intense and concentrated character. At Monte Dorado, we treat it with the same dedication and respect, because we know that its smaller size holds a depth of flavor that moves you.
Each shoulder ham we produce comes from the same noble origin: Iberian pigs raised with respect, fed with acorns or natural feed depending on their category, and cured patiently for more than 16 months. The result is a more agile piece, ideal for daily consumption, but without sacrificing the grandeur of Iberian.

A format that concentrates the essence
The shoulder ham, due to its morphology, allows a faster curing than the ham, which results in a firmer meat, more marked flavors and a fat with a deeper point. It is a piece that opens easily, is enjoyed lightly, but awakens an extraordinary intensity in the mouth.
In our cellars, each shoulder ham is treated as a work in progress: hung, watched, caressed by the clean air of the south and by the wisdom of time.
Elegance, authenticity and versatility
Monte Dorado offers a complete range of shoulder hams, from the 100% Iberian acorn-fed, an authentic jewel of the Iberian, to non-standard pieces that hide gustatory treasures. They are ideal for sharing, for giving as gifts or simply for enjoying without complications, on any occasion that deserves something more than the everyday.
The Iberian shoulder ham has something intimate, domestic, and everyday about it. It is generous in the cut, noble in flavor, and capable of conquering from the first bite.
Small in size, immense in flavor
If the ham is the complete work, the shoulder ham is the short and perfect poem. And like every good poem, it leaves a mark.
At Monte Dorado we work it with the same demand, the same respect and the same passion as our most noble pieces. Because we know that the essential, many times, is found in the small.
